The
orujo
is
a
liquor
obtained
from
the
distillation
of
the
refuse
of
the
grapes
after
their
pressing
during
the
process
of
wine
making.
The
orujo
is
thus
related
to
the
French
and
Spanish
marc,
the
Italian
grappa
and
the
Portuguese
bagaçeiras.
The
orujo
has
a
long
popular
tradition
in
Castile
and
it
is
the
liquor
of
grapes
with
the
highest
alcoholic
strength
that
goes
up
to
50%.
It
has
a
more
rustic
flavour
than
its
cousins
and
it
is
appreciated
by
those
who
prefer
stronger
liquors.
The
orujo
is
intimately
related
to
the
queimada,
a
Gallician
ritual
inherited
from
the
Celts,
that
consists
of
mixing
the
orujo
with
sugar,
peel
of
lemon
and
orange
and
beans
of
coffee.
In
some
parts
red
wine
is
also
added.
The
mix
is
then
set
on
flames,
and
while
mixing
it
with
a
ladle,
a
spell
must
be
conjured.
Once
the
alcohol
is
burned
out
(or
earlier
if
so
wished)
it
is
served
in
small
cups
and
drunk
hot. |
